Maison des Saules 'La Madeleine' Côtes du Jura, 2023 PYCM oily palate dialed in onThis lovely wine is 100% Chardonnay, from young vines grown on grey marl and clay. With the added western exposure and 12 months aging in used oak, the wine is rich, textured, savory, and peachy. Pair this with a pan seared black cod, over braised butter beans, fennel, and capers. Winemakers Anne Ccile and Marc were trained as sommeliers, before going off to work with Franois Rousset Martin in Jura and Thomas Pico in Chablis. All the while they were
